Tonight I decided to make quesadillas for dinner. It's amazing how filling they are!
I don't have the typical ingredient picture, so imagine this.
Ingredients:
Tortillas (any kind will do)
Pre-cooked chicken strips
Cheese
Cilantro (optional)
Sour cream (optional)
Salsa (optional)
I used healthy Mission Tortillas.
Lay your chicken out on a pie pan or cookie sheet, etc.
Heat it up under the broiler for a few minutes. This is not rocket science, folks.
Meanwhile, grate some cheese. Grate more than you think you'll need.
Preheat a sauté pan or griddle or whatever has an adequately flat surface. Lay a tortilla into the pan.
Sprinkle cheese on the tortilla. Make it a nice layer.
Now, lay some chicken on the base.
Put more cheese on top of the chicken. This will really seal it in. (I put cilantro on mine at this point.)
Cover it with the second tortilla.
Wait until it's all melted and beautiful! Now, cut it into quarters.
